Vegan & GF Banana Bread

Want my vegan & glue free banana bread recipe?

This bread is delicious, nutritious, and can be enjoyed by vegans and non-vegans alike. 

Recipe

3 ripe mashed bananas

2 cups almond meal

2 tbsp honey/rice malt syrup/maple syrup  

1 cup brown rice flour (you can use any GF flour)

1 chia egg (2 tbsp chia seeds, 8 tbsp water)

1 cup almond milk 

1 tsp baking powder

Sprinkle of cinnamon 

Prepare your chia egg first by mixing the chia & water together. Set aside for a few minutes until it sets. 

Add all of the ingredients into a bowl and mix together until combined into a nice batter. You may need a dash of water to combine all of the ingredients. 

Place in a lined tin and bake at 180℃ and bake for 45-60 minutes depending on your oven. 

When the knife comes out clean you know it's cooked!

You can enjoy this bread as is, or top it with your favourite toppings like butter, coconut yogurt, honey, cinnamon, nuts or seeds.
